3/4 C flour
2 t cinnamon
1 t baking powder
1 t ground ginger
1/2 t salt
1/2 t ground nutmeg
3 eggs
1 C sugar
2/3 C canned pumpkin
1 t lemon juice
1 C chopped walnuts (optional)
little powdered sugar
8 oz. packages cream cheese
1/4 C butter
1/2 t vanilla
1 C powdered sugar

Grease and lightly flour a jelly roll pan, set aside. Stir together flour, cinnamon, baking powder, ginger, salt, and nutmeg. In a small mixing bowl beat whole eggs at high speed about 5 minutes. Gradually add sugar, beating till sugar dissolves. Stir in pumpkin and lemon juice. Fold dry ingredients into pumpkin mixture. Spread evenly into prepared pan. Sprinkle with walnuts. Bake at 375 for 12-15 minutes. Immediately loosen edges of cake from pan and turn out into a towel sprinkled with powdered sugar. Started with narrow end, roll warm cake and towel together. Cool on wire rack. For filling, Beat cream cheese, butter, and vanilla until smooth. Beat in 1 c powdered sugar. Unroll cake, spread with filling. Roll up cake only, and chill until serving time.
