Ingredients:
Ingredients:
1 side fresh salmon, boned but skin on, about 3 pounds (I usually get this at Costco)

Marinade:
3 tbsp. soy sauce
2 cloves garlic smashed
5 tbsp. olive oil
1 tbsp. Worcestershire sauce
1 tsp. brown sugar

Sauce:
1 cup pineapple or apricot preserves
1/2 chopped jalapeņo
1/2 tsp. dried ginger
1/2 cup chili sauce
1/4 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Preheat grill. Cut salmon into 4 equal pieces so it will be easier to flip. Place salmon and marinade ingredients into large resealable plastic bag. Allow to sit for 10 minutes at room temperature. Put sauce ingredients in a bowl and microwave 2 to 3 minutes so it can easily be brushed on fish. Place salmon skin down on grill and discard marinade. Salt and pepper liberally. Grill about 5 minutes, then turn pieces carefully with wide spatula. Grill for 5 more minutes. Brush sauce on the salmon and grill for another minute or two to allow sauce to glaze the fish. Remove from the grill and let the salmon rest for 5 to 10 minutes. If skin did not peel off on grill, remove before serving. Squeeze fresh lemon over fish and top with parsley or dill if desired.

Personal Notes:
Personal Notes:
Any favorite jam can be used in the sauce, I sometimes substitute orange marmalade. We've enjoyed grilled salmon many times during our years together.
