1 1/2 c. sugar
3 egg yolks
3 c. buttermilk
3 T. lemon juice
1 tsp. vanilla
6 T. cornstarch
1/4 tsp. salt
3/4 c. raisins
1 T. butter
Baked pie shell

Meringue:
3 egg whites
6 T. sugar
1/4 tsp. cornstarch
1/4 tsp. cream of tartar
1 tsp. vanilla

Directions:
Directions:
In saucepan, combine (gradually) cornstarch and salt. Beat egg yolks and buttermilk. Stir into sugar mixture until smooth; Add raisins and lemon juice. Cook and stir over medium heat until it comes to a gentle boil. Cook 2 min. stirring; remove from heat; add butter and vanilla.
Pour into shell. Cool.
Meringue:
Meanwhile, in a small mixing bowl, beat egg whites until soft peaks form. Gradually add sugar, beating until stiff but not dry. Spoon meringue over pie, making sure that meringue touches edge of crust. Bake at 450 degrees F for 4 to 5 minutes or until meringue is lightly browned.
Cover with meringue.
