4 cups apples, peeled and chopped (Granny Smith & Jazz)
1 cup sugar
1/2 cup brown sugar
2 tsp cinnamon
1 tsp vanilla
3 eggs
1 cup oil
1/2 cup milk or apple juice
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup toasted & chopped pecans, optional

Glaze
1 stick unsalted butter
1 cup brown sugar
1/4 cup heavy cream
Pinch of salt
1/4 teaspoon vanilla
Combine in a saucepan and bring to a boil for 1 minute. Remove from heat and stir in vanilla. Pour glaze over cake.

Combine apples, sugars, cinnamon, nutmeg, and vanilla; stir well and allow to sit for 20 minutes. In another bowl, whisk together flour, baking powder, baking soda, and salt; set aside. After the 20 minutes, preheat oven to 350 degrees. Grease or spray a 13x9 baking dish; set aside. Mix in the oil and milk, then add the eggs, one at a time, to the apple mixture. Stir in flour mixture and pecans, if using. Pour mixture into prepared baking dish, and bake for 45 minutes. Prepare brown sugar glaze once cake is out of oven. Pour hot glaze over still-warm cake. Allow glaze to set before slicing.
