1 3/4 c flour
1 1/4 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
2/3 c sugar
1/3 c olive oil (or use 2 Tbsp butter, 3 Tbsp oil)
2 eggs
2 Tbsp milk
1 1/2 c mashed ripe banana (about 3)
1/4 c oat bran (optional)
1/4 c chopped nuts (optional)
1 c chocolate chips (optional)

Directions:
Directions:
Preheat oven to 350º. Stir together flour, baking powder, soda and salt, set aside. In a mixer bowl beat sugar and oil until light, scraping sides of bowl once. Add eggs, one at a time, and the milk, beating until smooth after each addition. Add flour mixture and banana alternatively to creamed mixture, beating just until smooth after each additions. Fold in nuts, chocolate chips, and oat bran if using. Turn batter into one lightly greased loaf pan. Bake for 50 minutes or until a toothpick inserted near center comes out clean. Cool in pan 10 minutes, remove from pan and cool.
Variation: heat oven to 375º, pour into 12 greased or paper lined muffin tin cups, bake for 17 minutes.
