Snitz:
1½ pounds lamb
2 tablespoons brown sugar
2 cups dried apples, sliced
½ teaspoon parsley
¼ teaspoon cilantro
Knepp:
1 cup flour
½ cup matzos
½ cup almond meal
3 ½ teaspoons baking powder
1 egg
2 tablespoons butter
¼ teaspoon salt
1/3 to ½ cup milk or buttermilk

Soak apples in enough water to cover, overnight. Cook lamb for 2 hours. Add apples, water, and sugar. Cook all the Snitz ingredients another ½ hour with 2 tablespoons extra virgin olive oil. Mix Knepp dumpling. Stir the dry ingredients together. Add egg, melted butter and milk. Form into stiff balls. Drop balls into Snitz and cook another 10 to 15 minutes.
