1½ pounds ground beef (or use 2 pounds ground beef and eliminate the pork and veal)
¼ pound ground pork
¼ pound ground veal
2 eggs
2 tablespoons finely chopped onion
1 ½ teaspoons salt
2 tablespoons chopped parsley
¼ teaspoon salt
2 tablespoons chopped celery leaves
¼ teaspoon dried thyme leaves
1 teaspoon chopped chives
¼ teaspoon nutmeg
¼ teaspoon finely chopped garlic
¼ cup milk
1 cup soft white bread crumbs
6 slices bacon
¼ cup dairy sour cream
½ cup chili sauce or ketchup
2 tablespoons brown sugar
¼ tablespoon dry mustard

Directions:
Directions:
Preheat oven to 350 degrees. In large bowl, beat eggs with salt, pepper, thyme and nutmeg until well mixed. Stir in milk, sour cream and bread crumbs. Let stand 5 minutes. Add beef, pork, veal, onions, parsley, celery leaves, chives and garlic. Mix lightly until well blended. Turn mixture into large shallow baking pan. Shape into loaf. Place bacon on top. Bake 45 minutes. Mix last three ingredients well. Put on top and sides of meatloaf. Bake an extra 30 minutes. Serves 6 - 8.
