Ingredients: 3 C - cooked mashed sweet potatoes 1/2 C - sugar (I use splenda or combo of splenda & sugar - just read the pkg for amount to use) 1/2 C - milk 1 tsp vanilla 2 eggs 1 stick oleo softened
Topping ingredients: 1 C - brown sugar 1/3 C - our 1 C - pecans broken into pieces 1/3 C melted butter

Directions:Combine first 6 ingredients in a large mixing bowl and mix until color lightens evenly throughout. The mixture should feel light and fluffy compared to how they started out. Pour into casserole dish and smooth top flat.
Combine topping ingredients until well-blended. It will be lumpy and sticky. Don’t be afraid to get your fingers dirty! Also, you may want to use extra nuts so it covers the potatoes better - it depends on how large the casserole dish is. Spread topping evenly over the potatoes. Cook for 30 minutes at 350 degrees. Keep an eye on the topping. If it starts browning too fast, cover with lid or tin foil until done. If topping is not bubbly and cooked well, you can broil for a short time, but keep a close eye on it so it doesn’t burn. |
