2 sweet Italian sausages
2 large leeks, sliced thinly
2 tablespoons olive oil
1 teaspoon minced shallot
4 tablespoons unsalted butter
1 cup chicken stock or broth
Salt and pepper to taste
2 tablespoons salt
1 pound gemelli, tagliatelle, or other wide flat pasta
˝ cup freshly grated Parmesan cheese

Directions:
Directions:
Grill sausages, slice thinly and set aside (or take out of casing, crumble and cook). Trim leeks, discard top 1/3 of tough greens and rinse thoroughly; drain. Heat oil in large skillet over medium heat. Add leeks and shallots, sauté until softened, about 5 minutes. Add half of the butter and all of the stock and simmer 5 minutes. Add salt and pepper to taste. Cook pasta in salted water; drain, return to pot, add leek sauce and toss well to coat pasta. Add remaining butter and cheese. Toss well and serve.
