2 medium long yams
1 large onion thinly sliced
1 garlic clove, crushed
3 tbsp. margarine
salt

125 g goat cheese

Directions:
Directions:
Bake yams at 300ºF with skin on until tender, approximately 45-60 min.
Once cooked, cool, peal and cut each into 9 round slices.
Melt margarine in frying pan, add garlic, onions. Stirring constantly until onions are brown and carmalized.

Slice goat cheese into 18 slices. Using a cookie sheet or baking dish lined with foil. Place 6 yam rounds on the foil. Layer with goat cheese, can be crumbled to cover the yam if needed. Add onions on the top of cheese. Repeat layers of yam, cheese, onion with the remaining ingredients. Can be aside fridge until needed.

When ready heat for 15 minutes at 300ºF until stacks are heated.
