Super Moist Banana Bread for a crowd Recipe

Ingredients: 6 cups of bananas mashed! Ό cup light olive oil Ύ cup of melted butter (I used Smart Balance) 4 medium eggs 4 tsp vanilla 4 tsp baking soda 4 tsp baking powder 3 cups sugar 6 cups flour 1 cup chopped walnuts (optional)

Directions:Preheat oven to 350 and place rack in middle of oven. Set out 3-4 loaf pans (I have two larger ones and one normal sized pan and this recipe is enough for the three pans.) Mix all the above ingredients in a large bowl, (its easier if you mix the all the other ingredients and then mix in the flour last - mix in the flour while gradually adding each of the cups of flour. I mixed each egg separately and added to the batter. Spray your loaf pans with a nonstick spray. Let your mix rest for a minute or so and then evenly divide into the loaf pans. Loaf pan should be just slightly more than half filled. Let the mix rest a few minutes in the loaf pans to settle and then put in the middle of the preheated oven. Bakes about an hour and 5 minutes; test for doneness by sticking a toothpick in the center. The bread is done when it comes out clean. (You may need to lower your oven temp and loosely cover your bread about halfway through the baking time.) Remove from oven and let them cool a couple of hours before removing from pan. Bread should feel pretty moist when removing from the pan. Wrap in foil until ready to eat. |
