9" unbaked pie shell
4 c. rhubarb finely chopped
3 eggs, separated
1 c. sugar
2 tbsp. flour
2 tbsp. margarine melted
1/3 c. sugar

Directions:
Directions:
Filling:
Combine rhubarb and egg yolks.
Add sugar and flour, mix well.
Stir in margarine.
Spoon into pie shell.

Meringue:
Beat egg whites until soft peaks form. Slowly add sugar while still beating until thick and glossy. Heap on pie. Bake at 350ºF for about 10 min or until meringue peaks are brown.
