1 1/3 c. flour
1 c. sugar
1 single-serving size packed instant oatmeal packet, uncooked (scant 1/2 c.)
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c. mashed ripe bananas (2 large)
1/3 c. vegetable oil
1/3 c. buttermilk, plain lowfat yogurt, or soured milk
2 large eggs
1 tsp. vanilla
Glaze:
5 tbsp. butter or margarine
1 c. brown sugar, packed
1/4 c. half and half
pinch of salt
1/2 tsp. vanilla

Directions:
Directions:
Heat oven to 350 º. Grease a 9 inch square pan. Mix flour, sugar, oatmeal, baking powder, soda, and salt. Stir in rest of ingredients. Pour in greased pan and bake 30-35 minutes, or until toothpick put in center is clean. Cool in pan 10 minutes.
Glaze: Combine butter and brown sugar in saucepan and stir over low heat until butter melts and mixture is smooth. Add half and half and the pinch of salt. Bring to boil over medium heat, then reduce heat to simmer for 4 minutes. Remove from heat, add vanilla, and let cool for 10-15 minutes, until slightly thickened. Spread on cake.

This can be doubled and put in a 9 x 13 pan or a bar pan and baking can be timed accordingly. A 9 x 13 will make a large cake.
