two terrapins
3/4 lb. butter

Directions:
Directions:
For two terrapins, add 3/4 lb. butter.
Brown the butter well.
Add a little water and thickening of brown flour.
Salt to taste.
Add a pinch of red pepper.
Pick terrapins up and add above ingredients, and then beat thoroughly.
If there are no eggs in the terrapin, use the yolks of 4 hard boiled eggs mixed smoothly with butter.

Thank you Uncle Harry and Aunt Elizabeth for bestowing upon us this most unusual recipe. Recipe from MOM RHODES COOKBOOK, Florence McConnor Rhodes, 1886 - 1967. During her life Mom Rhodes used very few written recipes, All of her recipes were carried in her head. However, she did record a few in a five cent tablet notebook. When compiling the recipes no editing was made. The original notebook, in 1984, was in possession of her oldest son, L. Kennard Rhodes, Jr. The compiling of these recipes was done by her son Harry C. and his wife Creighton J., Rhodes, in hopes that you will enjoy. November 15, 1984
