1 white cake mix
1 1/4 cup water
1/3 cup oil
4 egg whites

Filling:
1 can lemon pie filling or 1 (3.4oz box lemon instant pudding prepared)

Frosting:
1 can of lemon or vanilla frosting
1 small cool whip

Directions:
Directions:
Prepare cake mix adding above ingredients. Spread into a greased 13x9 pan. Drop pudding or pie filling by heaping teaspoonfuls evenly onto batter. Bake at 350º for 30-40 minutes. Cool at least 45 minutes. Mix canned frosting and cool whip and spread over cake.

This makes a very pretty Easter cake with it's creamy lemon
yellow pockets but any Spring day would be a fine reason to make it . Lemon = Springtime to me.
