2 small flour tortillas
1 teaspoon olive oil
2 ounces sharp white cheddar cheese, cubed
1 avocado, smashed
2 Tablespoons sun-dried tomatoes
Salt and pepper to taste

Directions:
Directions:
Heat oil in a small non-stick skillet over medium heat. Place tortilla in the pan. Layer half of the cheese on top, slather on avocado, layer sun-dried tomatoes and the rest of the cheese and sprinkle salt and pepper. Top with the additional tortilla. Cook for about 4 minutes on each side until tortillas are golden brown and the cheese starts to melt. Cut and Serve.
