2 1/2 pounds lamb or beef chuck
1 stick butter, or 1/2 c. veg. oil or olive oil
1/4 c. minced onion
8 oz. can tomato sauce or 4-5 medium ripe tomatoes, peeled, seeded, and chopped
1/4 tsp. salt and 1/4 tsp. pepper
2 c. water
6 1/2 c. boiling water
1/2 pound orzo
1 c. grated cheese, Parmesan or Kefalotiri

Preheat oven to 350.
Cute meat into bite-sized pieces or leave whole. Melt butter in a large casserole. Add meat, onion, tomato sauce/tomatoes, salt, pepper, 2 c. water. Mix well. Cover and bake for 1 hour or until meat is tender.
Add 6 1/2 c. boiling water and orzo to meat mixture. Stir well and continue baking for 1/2 hour. Serve with grated cheese.
