1/4 cup finely chopped pecans
1/4 cup finely chopped almonds
1/4 cup finely chopped walnuts
3/4 cup finely chopped vanilla wafers
2 tbsp. butter, melted

Filling:
1 1/2 lbs. cream cheese
1 1/3 cups sugar
5 large eggs
16 oz. sour cream
1/4 cup flour
2 tsp. vanilla extract
2 tsp. lemon juice

Parchment paper (optional)
Spring form pan

**All ingredients should be at room temperature before starting.

Crust: Mix all nuts and vanilla wafer crumbs with melted butter and press into a 9 inch buttered spring form pan (or lined with parchment paper). Lining the sides about 1 1/2 inches up the sides of the pan. Set aside.

Filling: Start by beating the cream cheese until light and fluffy. (keep mixer on low setting). Add sugar a little at a time and continue beating until creamy. Add one egg at a time beating after each egg. Add flour, vanilla, lemon juice and mix well. Pour into spring form pan. Place in middle of top rack and cook on 325º for 1 hour and 15 minutes. When time is up, prop open oven door and leave in over for one hour. Let cool, then place in fridge for 24 hours before serving.

Top with fruit if desired.
