1/2 cup warm, not hot, water
1 envelope active dry yeast
1 1/2 cups lukewarm milk
1/4 cup sugar
2 eggs, well beaten
2 tbsp melted shortening or cooking oil
1/2 tsp vanilla
1 tsp salt
4 to 4 1/2 cups unsifted all-purpose flour
1 cup seedless raisens
3 small apples, peeled and diced
cooking oil for deep-frying
icing sugar

In warmed mixing bowl, dissolve 1 tsp sugar in 1/2 cup warm water; sprinkle yeast on top and let stand 10 minutes. Stir with a fork. Meanwhile heat milk to lukewarm, stir in sugar to dissolve; add to softened yeast. Add eggs, shortening, vanilla and salt. Stir in 2 cups flour, beat well; add 2 to 2 1/2 cups flour or enough to make a stiff batter, beating well. Add raisins and diced apples; combine. Cover bowl and let rise in a warm place, free from drafts, for 1 1/2 hours or until batter is light. Pour oil to a depth of 3-4 inches in a deep saucepan or fat fryer; heat to 365º. Drop batter by heaping teaspoons into hot fat. When sufficiently brown on under side, turn to brown opposite side. Remove with slotted spoon to absorbent paper towels. Serve warm, dipped in icing sugar. Makes 8-9 dozen. Oliebollen may be wrapped securely, frozen and stored up to 3-4 weeks.
