1/4 cup white wine vinegar
1/2 cup olive oil
3 sprigs thyme
1/4 teaspoon black pepper, plus more for serving
2 14 ounce cans of hearts of palm, drained and rinsed
1/2 to 3/4 pound prosciutto

Directions:
Directions:
1. In a medium bowl, combine vinegar, oil, thyme and pepper.

2. Cut hearts of palm in half crosswise. If they are thick, halve lengthwise first.

3. Wrap each piece in a slice of prosciutto cut to fit and secure with a toothpick.

4. Place in marinade. Cover and refrigerate at least 3 hours.

5. Remove from marinade and serve at room temperature with a grind of black pepper.
