1 c raisins
1/2 c dark rum
3 c flour
1 t salt
1 t baking soda
1 t baking powder
2 t cinnamon
1/2 t nutmeg
1/2 c + 2 T coconut, flaked
1/2 c veg shortening
1 c firmly packed brown sugar
2 eggs, beaten lightly
1/3 c buttermilk
1 c mashed ripe banana

Directions:
In a small bowl, steep raisins in rum, heated, for 1 hour. In a bowl combine with a fork flour, salt, baking soda, baking powder, cinnamon, nutmeg & 1/2 flaked coconut. In a large bowl stir together brown sugar & shortening, add eggs & combine mixture well. Stir in buttermilk, banana & raisin mixture, stir batter until just combined. Spoon the batter into a greased loaf pan 9 1/4 x 5 1/4 x 2 3/4, sprinkle it with the remaining 2 T flaked coconut. Bake in the middle of a 350º oven for 60 -70 min. Serve bread warm with softened butter & apricot jam.
