- Non stick veg oil spray
- 2 ½ lbs cream cheese
- 1 ¾ cups sugar
- 1 cup unsweetened cocoa
- 3 large eggs
- 1.2 cup whipping cream
- 2 tbls. Coffee liquor
- 1 ½ tbls Frangelico (hazel nut liquor)
- 1 tsp vanilla
Chocolate Glaze:
- ¼ cup coffee liquor
- ¼ cup Frangelico
- 2 tbls. Dark rum
- 12 oz. bittersweet chocolate, chopped
- ¼ cup whipping cream
- ¼ cup butter

Filling: 300 oven, Line bottom and sides of 9’’ spring form with wax paper. Spray paper with oil spray. Beat cream cheese and sugar in large bowl until smooth. Gradually mix in coca. Beat in eggs 1 at a time. Gradually add last 4 ingred. Until smooth. Transfer to pan. Bake 1 ½ hours center set but moist looking. Cool on rack. Chill 6 hours.
Glaze: Boil coffee lig, Frangelico and rum in heavy sauce pan until reduced to ¼ cup (3 min) Reduce heat to low add chocolate, cream and butter. Stir until smooth. Cool until mixture is smooth and thick but still pourable (45 min.) Release pan side. Pour glaze over cake. Spread smoothly on top and sides covering completely. Chill until choc. Is firm (2 hours.) Invert cake on platter. Peel off paper. Smooth top, cut in wedges and serve.
