6 boneless, skinless chicken breasts
salt and pepper
2 large onions, sliced
3 green bell peppers, sliced into strips
1 clove garlic, minced
1/2 cup Canadian bacon, diced
1 28 ounce can crushed tomatoes
10 pimiento stuffed olives, sliced

Directions:
Directions:
Season chicken with salt and pepper. Heat a skillet that is sprayed with nonstick spray and sauté chicken. Turn and cook on other side. Remove from pan and set aside. Saute for 2 minutes. Add garlic, onions, and peppers. Cook until vegetables are tender. Add tomatoes and cook for 5 minutes. Add chicken back to pan and cover with tomato mixture. Cover and simmer for 30 minutes. Stir in olives. Serve over cooked rice.
