1 16oz box penne pasta (I used whole wheat)
5 Tbsp butter, divided
1/2 cup onion, diced
1 clove garlic, minced
1 1/2 lbs fresh lobster meat, including
claw meat, steamed
5 Tbsp all-purpose flour
2 cups milk
2 cups Fontina cheese, shredded
2 cups white cheddar, shredded
1 cup romano cheese, grated
salt and pepper to taste
1/2 cup panko bread crumbs

Preheat ove to 350 F

Cook pasta according to package directions until almost al dente;drain, place in a large casserole dish and set aside.

In a medium saucepan over medium heat, add 2 tbsp butter. Once melted, add onion and garlic and saute for 5 minutes or until onion has softened, place in the casserole dish with the pasta. Add lobster meat and toss gently to mix well, set aside. (I actually just put the pasta and all back into the large pot I cooked it in for easier combining later.)

In the same saucepan, add remaining butter. Once melted, whisk in flour and stir for 5 minutes or until the mixture becomes paste-like. Gradually whisk in milk until smooth; bring to a simmer over medium heat. Cook, whisking often, for 5 minutes or until the mixture is thick and smooth. Stir in all three cheeses and cook for 5 minutes or until cheese is melted and mixture is smooth; season to taste with salt and pepper. Pour cheese sauce over past in casserole dish and mix to combine. sprinkle top evenly with bread crumbs and bake for 10 - 12 minutes or until the sauce is bubbly and top is golden brown.
