Avocado Salsa: 1 diced avocado, peeled and pitted
1 cup diced tomato
1/2 cup scallions, chopped
juice of 2 limes (heat in microwave 15 seconds to get more juice)
2 Tbsp. fresh cilantro, chopped
salt and pepper

Black Bean Mixture: 1 Tbsp. olive oil
1/2 cup diced onion
1 Tbsp. minced garlic
2 cans black beans, drained
1 tsp. cumin

Sauce: 1/4 cup mayonnaise
1 Tbsp. ketchup
2 Tbsp. salsa

Sandwich: large Pita Breads
shredded lettuce

Directions:

Mix avocado salsa ingredients together in a bowl; set aside. Heat oil in pan and add onion and garlic. Saute until onion is soft. Add beans and cumin. Saute a few minutes; Set aside. To make sauce, combine mayonnaise, ketchup and salsa; set aside.

To assemble sandwiches: Warm large pita and cut off part of the top. Spread some sauce. Add shredded lettuce, bean mixture and avocado salsa. Yum!!!

*Note: You could use a tortilla instead of the pita.
