3 eggs
1 cup vegetable oil
2 cups sugar
2 cups grated or ground zuccini
1 Tbs vanilla
3 cups flour
1 Tsp salt
1/4 Tsp baking powder
1 Tsp baking soda
3/4 Tsp nutmeg
3 Tsp cinnamon
1 cup chopped nuts

Directions:
Directions:
Mix together eggs, vegetable oil, sugar, zuccini and vanilla. Sift together flour, salt, baking powder and soda, nutmeg and cinnamon. Add this to the wet mixture then add the nuts. Mix well. Grease and flour 2 loaf pans. Bake at 350º for 1 hour. If you want 6 small loaves, bake for 50 minutes. Rotation the small pans.
