1 ½ lbs lean ground beef
1 small to medium onion (finely chopped, depending on your taste)
2 cloves garlic (finely chopped)
½ c. fresh parsley (finely chopped)
1 pinch nutmeg
1 c Italian bread crumbs
2 to 3 slices white bread (crusts removed, day old if possible)
¼ c. milk (just enough to let the bread soak it all up)
2 eggs
½ c. Parmesan cheese
salt and pepper to taste

In a large mixing bowl combine ground beef, finely chopped onion, finely chopped garlic, finely chopped parsley, nutmeg, salt, pepper, eggs and cheese. In a frying pan, break up bread into small pieces, pour the milk over the top until milk is all soaked up (start with ¼ cup then add more milk if needed until bread is all moist.) then warm it up in the pan almost to a simmer. Let the bread cool then add it to the mixture.

With your hands, mix all ingredients thoroughly, and roll into balls. Approximately 1 ½ to 2 “ inch diameter. In a heavy frying pan, coat with olive oil and brown meatballs on all sides. Put browned meatballs into the sauce and let cook for a while.
