4 heads of garlic (about 1 3/4 cup)
2 c olive oil
1 tsp salt
1/2 c fresh lime juice

Heat oven to 325º

1) breakdown garlic heads until each clove is peeled...smash each clove lightly with the back of knife...place into a casserole dish, 2 qt size is fine or even 8x8 or 9x9 pan...

2) cover garlic with olive oil and mix in the salt...make sure all of the garlic is submerged in the oil...place in oven for 45-55 minutes until garlic is soft and lightly browned...

3) remove pan and lightly smash garlic with mashed potato masher while still submerged in olive oil...add lime juice, stir, and return to oven...cook for another 20 minutes...

4) remove from oven and lightly smash garlic again with mashed potato masher...

5) place garlic and olive oil in an airtight glass container...this can be stored in the refrigerator up to 3 months...

It is easy to find garlic already peeled in airtight containers...these are fine to use...

This can be used to saute vegetables, seafood, add to pasta dishes...you are only limited by your imagination on its uses...

Be sure to keep garlic covered by oil when keeping in the refrigerator...
