small chicken, cut into sections
1 sm. onion, chopped
1/4 t. pepper
1/4 t. nutmeg
pinch of mace
herbs to taste
2 c. stock
1 c. cream or milk
2 eggs, well beaten
1 T. butter
flour to thicken
juice of 1 lemon

Directions:
Directions:
Soak the chicken sections in salt water for at least 1 hour. Drain, and cover with fresh water in a pan. Add onion, herbs, spices, and pepper. Cover and simmer until tender, about an hour. Remove meat from kettle and place in oven to keep warm. Drain the stock and reserve 2 cups. Melt the butter and add 2 to 3 T. flour. Mix in reserved stock and cream, whisking until smooth. Slowly stir in the beaten eggs. Bring to the boil and remove from heat. Stir in lemon juice and pour over the chicken.
