Store these seeds after toasting in an airtight container for up to 4 months. You can store them ground or unground. Grind them in a spice grinder, coffee mill or a mortar and pestle by hand. use these seeds in the Indian Slaw, White Chicken Chili or Indian Fruit Salad recipes.

Place the cumin seeds in a well-seasoned iron skillet on medium-high. Toast, shaking the skillet occasionally, until cumin becomes brown and starts to smoke, do not let cumin burn. Cool and store until needed.
