2-3 T olive oil
2 c. onions, chopped
2 cl. garlic, minced
2 c. sweet potatoes or other squash, chopped
1/2 c. celery, chopped
1 c. fresh tomatoes, chopped
3/4 c. sweet pepper, diced
1 1/2 c. cooked chickpeas
3 c. stock or water
2 t. paprika
1 t. turmeric
1 t. basil
1 t. salt
1 dash cinnamon
1 dash cayenne pepper
1 bay leaf
1 T soy sauce

Directions:
Directions:
In a soup kettle, saute onions, garlic, celery, and sweet potatoes in the olive oil, about 5 minutes. Add stock and seasonings, except soy sauce. Simmer, covered, 15 minutes. Add remaining veggies and chickpeas. Simmer another 10 min. or so, or until veggies are tender. Stir in soy sauce before serving. Feel free to use other green and orange vegetables!
