Meatballs:
1 lb. ground beef or turkey
1 egg
1/2 cup bread crumbs
1 clove garlic, minced finely
salt and pepper
Soup:
1 chicken
2 heads escarole or spinach
2 medium onions
1/2 cup celery, chopped
1/2 cup carrots, chopped
1/2 cup parmesan cheese
salt, Italian seasoning, garlic, crushed red pepper
small pasta (ditalini or tiny shells) cooked

Directions:
Directions:
In a large covered pot place chicken, onion, celery and carrot with water to cover. Bring to a boil; turn down heat and simmer 60 minutes. While simmering prepare meatballs. Mix meat, egg, breadcurmbs, garlic, and salt and pepper and a little cold water to moisten. Shape into tiny meatballs and bake at 350º for 25 minutes or until browned. Remove chicken and allow to cool. Bone chicken and return to pot. Add escarole and boil until tender. Add meatballs and a little pasta and heat soup. Serve with parmesan cheese.
