1 lb. pea beans
½ tsp. baking soda
¼ lb. salt pork, scored
½ c. Sugar
2 tbsp. molasses
½ tsp. dry mustard
½ tsp. ginger
½ tsp. salt
1 small onion, grated

Directions:
Directions:
Soak the beans over night.
Drain water and add enough fresh water to cover beans. Add baking soda and boil until skins crack, about 20 minutes.

Put beans and water into bean pot or baking dish. Add the rest of the ingredients and stir well. Bake in low oven, 300 - 325º for about 6 hours. Check every hour to make sure beans are not dry and add water off needed.

This was my grandmother, Gertrude Wheeler's, recipe. We have this for every Parkin Family Reunion.
Do not do what I did and make "drunk beans". They don't taste very good.
