1 1/2 c. sugar
3/4 c. vegetable oil
4 eggs
1 (3.4 oz.) package vanilla instant pudding
2 1/2 c. flour
1 tsp. salt
1/2 tsp. baking powder
2 tsp. baking soda
3 c. mashed very ripe bananas (leave some chunks of fruit)
1 1.2 c. chopped nuts

Directions:

Heat oven to 350º
Grease 2 5x9 in. loaf pans or 3 smaller pans
Combine sugar, oil and eggs; mix well.
In separate bowl, whisk pudding mix, flour, salt, baking powder and baking soda. Add gradually to sugar mixture and stir until well-combined. Fold in bananas and nuts.
Bake 55 minutes or until a pick inserted at center comes out clean.
