1/2 red or sweet onion
3 coloured peppers
6 small tomatoes
1 jalapeņo pepper
1 bunch cilantro
1 teaspoon ground cumin
1 tablespoon catsup
1-2 limes
Balsamic vinegar
optional garlic

Directions:
Directions:
Remove tomato and pepper seeds.
Chop all vegetables finely. Add 1/2 bunch cilantro chopped. Add juice of 1-2 limes.
Stir in cumin and catsup.
Add balsamic vinegar to taste.
Add salt and pepper to taste. If not "hot enough" you can add some hot sauce.
Can be made a few hours in advance. Serve with corn chips.

Ratio of vegetables is not critical. Can add a can of drained black beans to make black bean salsa.
Can add garlic if desired.
Gluten free if made with gluten free ketchup (Heinz) and gluten free balsamic vinegar
