Ingredients: 1 can corned beef 3 to 4 medium potatoes 1/4 minced onions 3 eggs, beaten salt and pepper to season Flour for dredging oil for frying

Directions: |
Directions:Cut potatoes in half; boil in enough water until soft. Peel skin and mash in bowl. Add corned beef, onion, eggs and seasoning. Mix together. Form into patties; dredge in flour. Heat pan on medium heat; add about 1-2 Tablespoons oil. Fry patties, adding oil as needed. |

Notes: This was my most favorite dish that my mom would make when I was growing up. I couldn't wait for her to teach me how to cook it and was I surprised how easy it was. She would say I think we'll make corned beef patties for dinner tonight, I would say ok I'll do it. How disappointed I was when it would fall apart either because I didn't have enough egg or too much potatoes. Now I have added a little bit of my own personal touch-flour to make it a little more crispy and keep it from falling apart. Mahalo nui loa, mom! You're legacy continues...
