dough for 1 pie crust
2 onions, sliced or roughly chopped
3-4 T. butter
4 eggs
3/4 c. cream
3/4 c. milk
3 1/2 oz. grated soft white cheese (i.e. Gruyere)
nutmeg
salt and pepper

Directions:
Directions:
Pre-bake pie crust at 425º F for 10 min. Saute onions in butter until just soft. Cool slightly and spread in the bottom of the pie shell. Beat eggs, add cream, milk, and cheese, and mix well. Pour over onions. Sprinkle nutmeg on top and bake at 350º F for 30 min, or until an inserted knife comes out clean.
