Medjool dates: 24 pitted
Bacon: 6-8 slices cut in half lengthwise and then cut in half through the middle
Toothpicks: soaked in water for at least 20 minutes
Optional Stuffing: little pieces of chorizo (Spanish sausage), a little chunk of cheese (Manchego or Goat), or whole almonds

Preheat oven to 450º
Line a rimmed cookie sheet with foil
Stuff dates if using stuffing
Wrap each date with a bacon slice and secure with a toothpick
Spread out on the cookie sheet and bake for 6 or 7 minutes; carefully turn with tongs
Bake until bacon is crispy - maybe 15 to 20 minutes or more - turning as needed to brown evenly. Enjoy!
