Grated cheddar or mozzarella cheese
1 package corn tortillas
1 large can sliced olives
diced onions
1 8 oz can tomato sauce
1 8 oz can enchilada sauce
1 pound ground beef or chicken cooked

Directions:
Directions:
Preheat oven to 350º. Heat oil. Dip tortillas in the oil just long enough to warm. Combine the tomato sauce and enchilada sauce. Pour a light layer of sauce on the bottom of a 9 x 13 inch greased pan. Assemble enchiladas one; add cooked ground beef or chicken, cheese, onions and olives. After the pan is full, pour remaining sauce over enchiladas. Cover with remaining cheese and olives. Bake for about 30 minutes.
