1/4 teaspoon salt
1/2 cup butter
1 cup brown sugar
1 cup bran or oatmeal or a combination of the two
1 cup sour milk
1 rounded cup all purpose flour
1 teaspoon baking soda
1/2 cup raisins or finely chopped dates (optional)
1/2 teaspoon ground cinnamon

Directions:

Mix together the egg, salt, brown sugar and butter. Add sour milk to egg mixture and stir till combined. In a separate bowl combine bran/oatmeal, flour, cinnamon, and baking soda. Add flour mixture to liquid and stir till just combined. Stir in raisins.
It is important not to over mix the batter or the muffins will be tough.
Put in greased muffin tins and bake at 400º F for about 12 to 15 min.
I now like parchment muffin liners or make sure you have newer, well greased tins.
Makes twelve. Bake until just firm in center - over baking will make the muffins dry.

Edith's variations for lower fat and calorie muffins
Reduce butter to half a cup and use half a cup of apple sauce or low fat sour cream.
Reduce sugar to half a cup.
I usually soak raisins in hot water to make plump - drain well before adding to the batter.
