How many tacos you are going to cook depends on how many tortillas
you’re going to have to cook per person. This recipe is for 24 tortillas for
tacos (these are thinner than regular tortillas)
• 4 large chicken breasts
• 1 cup of oil
• 2 stalks of celery, diced
• 1 medium onion, diced
• 2 garlic cloves, diced
• 1 large or 2 medium bay leafs
• salt and pepper to taste
• Large bowl of chopped or shredded lettuce,
• Medium bowl of grated Monterrey Jack cheese
• 2 cups of sour cream
(have more of above ingredients available in case you need more)

Cook the chicken with celery, onion, garlic, bay leaf, salt and pepper. When well cooked, shred the chicken. Place portions of shredded chicken in the middle of each tortilla and fold each in half. Place each stuffed tortilla on a plate until all are filled. In a large, heavy skillet, place the oil and heat. Start frying the tortillas 3 to 4 at a time until they are golden on one side then flip until it turns golden brown on both sides. When it’s ready, put it on a plate and let it cool off slightly. You could put toppings like cheese, lettuce, sour cream, etc. Last step is to enjoy!
