1 c. fresh cranberries
1 c. pecans or walnuts
1/4 c. brown sugar
1 c. butter
1 1/2 c. sugar
1/2 t. baking powder
1/2 t. salt
2 eggs
2 t. orange zest
3 1/4 c. flour

Directions:
Directions:
Combine cranberries, nuts, and brown sugar in a food processor and process until finely chopped. Cream butter and sugar. Beat in eggs and zest. Add dry ingredients and mix until a dough is formed. Divide dough in half. Chill 1 hour. Roll each half between sheets of wax paper, into 10 in. squares. Spread 1/2 of the cranberry filling over each square, to within 1/2 in. of the edge on one side. Roll up dough using wax paper to lift and guide. Moisten unfilled edge and pinch to seal. Wrap logs in plastic and chill 4 to 24 hrs. Preheat oven to 375º F. Cut logs into 1/4 in. slices. Place on cookie sheets (un-greased or lined with parchment) and bake 10-12 min. Cool on cookie sheet 1 min. before transferring to wire rack to cool completely.
Chilling tip: Cut logs in 1/2, wrap in plastic, and place in tall glasses. Lay glasses on their sides in the fridge or freezer. this helps logs retain a round shape.
