2 cups flour
2 cups sugar
2 tsp cinnamon
2 tsp. soda
2 tsp salt
1 ½ cups oil
4 large eggs
3 cups grated uncooked carrots (packed tight)

Frosting
1 box sifted powdered sugar
1 8 oz. cream cheese softened
1 stick margarine softened
2 tsp. vanilla
Pecans and coconut optional

Directions:
Directions:
Preheat oven to 350º. Mix the dry ingredients and make a well. Add oil and stir well. Add eggs one at a time & stir after each egg. Add carrots. Bake in a 9 x 13 pan for 30 to 35 minutes. Cool. For the frosting beat all of the ingredients together until smooth.
