1 lb carrots (about 6 medium carrots)
1 tsp thyme (fresh or dried)
1 1/2 Tbsp butter
2 Tbsp sugar
1/2 tsp salt
Coarsely ground black pepper
2 Tbsp fresh lemon juice
2 Tbsp parsley (fresh or dried)

Directions:
Peel carrots and slice about 1/3 inch thick. Boil about 5 minutes or until tender. Melt butter in a 10" skillet over medium heat. Stir in sugar, lemon juice and thyme. Bring to a boil. Add carrots and salt and pepper. Stir well and cook stirring occasionally until carrots are tender and the sauce is almost completely absorbed. About 5 minutes. Sprinkle with parsley
