1 large or 2 medium eggs (beaten until frothy with hand held mixer)
½ cup packed brown sugar
1/3 - ½ cup corn syrup
1/8 - ¼ teaspoon salt
¼ cup melted butter
1 teaspoon white vinegar
1 1/2 teaspoons vanilla
Optional: raisins soaked in hot juice or water (well drained) and/or a few chopped pecans or walnuts

Directions:
Directions:
Beat other ingredients into the eggs with the hand mixer.
Put a few raisins and chopped nuts into each tart shell.
Fill ¾ full with egg and sugar mixture.
Bake at 350 º F in a preheated oven for 10 minutes.
Reduce heat to 300 º F for about 5 minutes until the tarts are cooked.

Brenda says be sure not to over cook the tarts or the filling will be dry.
Linda says that her husband Jim does not like raisins so she omits them and just uses pecans.
