1/2 cup olive oil
2 lbs Italian sausage
2 cloves garlic (crushed)or more
1/4 cup chopped parsley
dried oregano to taste
2 cans (2 lbs 3 oz size) Italian plum tomatoes undrained
1 can puree
2 cans (6 oz size) tomato paste-
2 (6 oz ) tomato paste cans of hot water
Optional...2-3 pork short ribs ,inch thick pork chop, pork rind rolled (like bracciole)
1 T salt or to taste
1/2 tsp pepper or to taste

Directions:
>Put the tomatoes in a blender/cuisinart
>Put tomato and puree in a pan to simmer 30-35 minutes
>In a big sauce pan Brown sausage on all sides in oil, pricking with fork and releasing fat.
>Take sausage out when browned and put onion and garlic and fry until golden
>Add tomato paste in the oil with the onion and garlic swish around a bit until oil is absorbed into the paste then add 2 tomato paste cans of hot water
>Add the tomatoes to the paste, add the sausage (other browned meats(bracciole, pork, pork rind rolled like bracciole) in and simmer covered 1 hour stirring occasionally.
>Make the meatballs, see recipe
>Add meatballs and their drippings, salt, pepper, oregano, parsley simmer partially covered 1 1/2 hours.....stirring occasionally.
