1 3/4 C. flour
3/4 C. sugar
1/2 C. margarine, melted*
2 tsp. baking powder
1 Tbsp. vanilla or anise

Chocolate Pizzelles
Add following ingredients to those in recipe shown above. Sift with flour and add to egg mixture.

1/4 C. cocoa
1/4 C. sugar
1/4 tsp. baking powder

Directions:
Directions:
Beat eggs, adding sugar gradually. Beat until smooth. Add cooled, melted margarine and vanilla or anise. Sift flour and baking powder and add to egg mixture. Dough will be sticky enough to be dropped by a spoon. Heat the pizzelle iron, and brush with oil. Drop about one tablespoon of batter onto each circle on the iron. You may need to experiment with the amount of batter and baking time depending on the iron. Bake for 20 to 45 seconds, or until steam is no longer coming out of the iron. Carefully remove cookies from the iron. Cool completely before storing in an airtight container. Makes about 30.

Personal Notes:
Personal Notes:
*Do not use more than 1/2 C. and do not use oil substitute. I use my small cookie scoop (1 Tbsp.) to make the perfect sized cookies. Dust with sifted confectioners sugar before storing. Occasionally, I’ll add ground anise seeds to the batter for a bit more flavor.
