1/2 C. soft butter
1 C. firmly packed brown sugar
1 egg
1 C. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 Tbsp. grated lime rind
2 Tbsp. lime juice
1 1/2 C. uncooked oats
1/2 C. raisins
1/4 C. chopped pecans

Directions:
Directions:
Cream butter; gradually add sugar, beating at medium speed of electric mixer until light and fluffy. Add eggs and beat well. Combine flour, soda and salt; add to creamed mixture, mixing well. Stir in rind, juice, oats, raisins and pecans. Drop dough by rounded teaspoonfuls onto greased cookie sheets. Bake at 350 for 10-12 minutes or until lightly browned. Cool slightly on cookie sheets; remove cookies to wire racks and cool completely. Makes about 4 dozen.

The lime in this recipe may be substituted with orange juice and orange peel. Aunt Julie says it's best with the lime! Have to go with experience on this one!
