1 can (1lb 12oz can) Mango pulp
8 oz Cool Whip
8 oz cream cheese
1 packet Knox unflavored gelatin
1.5 cups sugar
3 cups water
3 medium-sized graham cracker pie shells

Directions:
Directions:
Bring water to boil, add contents of 3 envelopes of gelatin and turn off heat.
Stir well until smooth (i.e. no clumps) and let cool to room temperature.
Using a hand-held beater, whip together cream cheese, sugar and Cool Whip
Beat thoroughly until the mixture is very smooth (about 5 minutes)
Add gelatin mixture and beat for 4 minutes
Add mango pulp and beat for an additional 4 minutes
Pour mixture into pie shells
Refrigerate for a minimum of 4 hours before serving

Mango pulp is available in Indian grocery stores. As a substitute, use canned or fresh mango and blend to a pulp
