1/4 c parsley
1 jalapeno, seeded and quartered
2 cloves garlic
2 T lime juice
2 T + 4 t olive oil
1/2 t salt
1 lg head cauliflower
1/4 t pepper
1 oz shaved parmesan cheese

Directions:
Directions:
In food processor, combine parsley, jalapeno, garlic, lime juice, 2 T olive oil and 1/4 tsp salt. Process 1 minute. Preheat oven to 420 degrees. Cut through cauliflower to make slices. Add olive oil to pan and coat both sides of cauliflower. Roast for 15 minutes and turn to brown remaining side for 15 minutes. Add salsa verde mixture and shaved parmesan.
